Turkey meatballs
- 500 g turkey mince
- ½ tsp garlic powder
- ½ tsp ground black pepper

- ½ tsp dried oregano

Red beans and rice
- 200 g brown rice
- 1 tbsp olive oil
- 1 brown onion, cut into quarters
- 2 garlic cloves
- 1 carrot, cut into pieces (4 cm)
- 1 celery stalk, cut into pieces (4 cm)
- 1 tbsp tomato paste
- ¼ tsp ground cayenne pepper
- 2 tsp fresh thyme, leaves only
- 1 fresh bay leaf
- 500 g water
- 1 tsp Chicken stock paste (see Tips)
- 400 g canned chopped tomatoes
- 1 tsp salt
- ½ tsp ground black pepper
- ¾ red capsicum, deseeded and cut into pieces (1 cm)
- 400 g red kidney beans, rinsed and drained (approx. 250 g after draining)
- 2 spring onions/shallots, cut into thin slices, for garnishing
