Marinated steak
- 500 g beef rump steak, partially frozen and cut into thin strips
- 4 garlic cloves
- 5 spring onions/shallots trimmed and cut into halves
- 40 g palm sugar, roughly chopped
- 80 g tamari
- 50 g mirin
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
Carrots with yoghurt dressing
- 250 g carrots, peeled and cut into pieces (3-4 cm)
- 300 g water
- 2 tsp salt
- 1 cm piece fresh ginger, peeled
- 1 garlic clove
- 2 tsp fish sauce
- 10 g palm sugar, roughly chopped
- ¼ tsp chilli powder
- 40 g natural yoghurt
- 1 tsp pure maple syrup
Ssamjang sauce
- 1 garlic clove
- 5 spring onions/shallots, trimmed and cut into halves
- 40 g soy paste (or soy bean paste - see Tips)
- 1 tbsp chilli paste (see Tips)
- 2 tsp honey
- 2 tsp sesame seeds
- 2 tsp sesame oil
