Rice paper rolls
- 100 g carrot, cut into quarters
- 1 red apple, cored and cut into halves
- 180 g red cabbage, cut into pieces (6-8 cm)
- 8 sprigs fresh coriander, stalks only, leaves reserved
- 2 tbsp roasted salted peanuts
- 1 avocado, flesh only
- 2 - 3 pinches salt
- 2 - 3 pinches ground black pepper
- 10 rice paper roll wrappers (see Tips)
- ½ yellow peach, stone removed and flesh cut into thin slices
- 2 sprigs fresh mint, leaves only
- 1 Lebanese cucumber, peeled into ribbons
