Fish burgers
- 2 cm piece fresh ginger, peeled

- 1 tbsp lime juice
- 2 tsp fish sauce
- 2 tsp brown sugar
Chilli mayo
- 50 g mayonnaise (see Tips)
- 1 - 2 tbsp hot chilli sauce, to taste

- 1 - 2 tbsp oil, for frying
- 3 bread rolls, cut into halves horizontally (see Tips)
