  • 150 g water
  • 15 g extra virgin olive oil
  • 180 g red onion
  • 5 garlic cloves
  • 200 g lamb mince lean (see Tips)

  • 20 g lemon juice
  • 1 tsp ground cumin
  • 2 sprigs fresh mint leaves only
  • 2 sprigs fresh coriander leaves only
  • ground black pepper to season
