  • 400 g sushi rice
  • 875 g water
  • oil for brushing waffle maker
  • 400 g crème fraîche
  • 15 - 30 g wasabi paste to taste
  • 10 g lime juice, freshly squeezed plus extra for drizzling
  • 10 g honey
  • ½ tsp fine sea salt
  • 2 pinches ground white pepper
  • 250 g salmon fillet, fresh, skinless cut in thin slices (see tip)
  • 250 g tuna, sashimi grade
  • 16 prawns, cooked
  • 1 mango, ripe cut in thin slices
  • 1 avocado cut in thin slices
  • 8 slices cucumber (cut in long strips lengthways with a vegetable peeler)
  • 1 lime cut in wedges
  • 8 tsp salmon roe
  • 1 nori seaweed crumbled
  • sesame seeds black and white, for sprinkling
  • sriracha sauce for sprinkling
  • lime juice, freshly squeezed for drizzling
