Green salad and dressing
- 120 g Lebanese cucumber, thinly sliced
- 40 g rocket leaves
- 40 g fresh baby spinach leaves
- 2 sprigs fresh dill, leaves only

Poached eggs and assembly
- 2 sprigs fresh dill, leaves only
- 1 garlic clove
- 300 g Greek-style natural yoghurt
- sea salt, to taste
- 1700 g water
- 50 g white vinegar
- 4 eggs
- 3 tbsp unsalted butter
- 1 tsp smoked paprika
- ½ - 1 tsp dried chilli flakes, to taste
- ½ tsp sumac
- 2 tbsp mixed fresh herbs, leaves only (e.g. dill, parsley, coriander, mint)
