  • 400 g yellow cherry tomatoes, halved and deseeded
  • 100 g apples, cut in pieces (2-3 cm)
  • 50 g brown sugar
  • 50 g water
  • ½ tsp salt
  • 2 pinches ground black pepper
  • ½ tsp ground cinnamon
  • 25 g white wine vinegar
  • 1 heaped tsp mustard

Quinoa Burger

  • 1200 g water
  • 1 ½ tsp salt
  • 60 g white quinoa
  • 20 g celery, cut in pieces
  • 80 g carrots, cut in pieces
  • 80 g onions, quartered
  • 20 g olive oil
  • 150 g tinned chickpeas, rinsed, drained
  • 3 sprigs fresh parsley, cut in pieces
  • ½ tsp smoked paprika
  • 1 medium egg
  • 40 g breadcrumbs
  • 1 - 2 pinches ground black pepper, to taste
  • 1 Tbsp olive oil
  • 4 hamburger buns (see tip)
  • 4 leaves iceberg lettuce
